Ingredients
  

  • 4 medium russet potatoes: Choose firm smooth-skinned ones.
  • 3 tablespoons olive oil: Adds flavor and helps them crisp up.
  • 1 cup shredded cheese: Cheddar or your choice.
  • 1/2 cup sour cream: Perfect for dipping.
  • 4 strips crispy bacon: Cooked and crumbled.

Instructions
 

  • Preheat the oven to 400°F (200°C). Wash the potatoes well.
  • Bake the potatoes for about 1 hour until tender. Cool slightly.
  • Cut the potatoes in half; scoop out some flesh, leaving a thin border.
  • Brush skins with olive oil. Place face down on the baking sheet.
  • Bake skins for another 10 minutes; turn over and add cheese and bacon.
  • Bake again until cheese is melted. Top with sour cream and chives.

Notes

Potato skins are best enjoyed fresh out of the oven for that perfect crunch.
If you plan to prepare them ahead of time, keep them refrigerated and simply add toppings before reheating.
