- 2 Large Eggplants sliced into rounds
- Salt: To taste and to draw moisture from eggplants
- 2 Cups Breadcrumbs: Adds crispy texture
- 2 Cups Grated Parmesan Cheese: Adds rich flavor
- 4 Cups Marinara Sauce: Homemade or store-bought
- 3 Cups Shredded Mozzarella Cheese: Melts beautifully
- 1/2 Cup Flour: For breading
- 3 Eggs beaten for coating
- Vegetable Oil: For frying
Prepare Eggplant: Sprinkle salt over the eggplant slices to drain moisture.
Let them sit for 30 minutes, then rinse thoroughly.
Breading Station: Set up three bowls with flour, beaten eggs, and a mixture of breadcrumbs and parmesan cheese.
Coat Eggplant: Dip each slice in flour, then eggs, and finally the breadcrumb mix.
Make sure each slice is well-coated.
Frying: Heat oil in a pan over medium.
Fry slices until golden, about 3 minutes per side. Rest fried slices on a baking sheet.
Layering: Preheat oven to 375°F (190°C).
Layer the ingredients in the baking dish: sauce, eggplant, mozzarella, and repeat.
Bake: Cover with foil and bake for 25 minutes.
Remove foil and bake for another 10 minutes until cheese bubbles and browns lightly.
Eggplant Prep: Salting eggplant helps reduce any bitterness and extra water.
Don’t skip this step for the best texture.
Cheese Choice: I like using a mix of regular and smoky mozzarella for extra flavor. 🧀
