Ingredients
  

  • 2 Large Eggplants sliced into rounds
  • Salt: To taste and to draw moisture from eggplants
  • 2 Cups Breadcrumbs: Adds crispy texture
  • 2 Cups Grated Parmesan Cheese: Adds rich flavor
  • 4 Cups Marinara Sauce: Homemade or store-bought
  • 3 Cups Shredded Mozzarella Cheese: Melts beautifully
  • 1/2 Cup Flour: For breading
  • 3 Eggs beaten for coating
  • Vegetable Oil: For frying

Instructions
 

  • Prepare Eggplant: Sprinkle salt over the eggplant slices to drain moisture.
  • Let them sit for 30 minutes, then rinse thoroughly.
  • Breading Station: Set up three bowls with flour, beaten eggs, and a mixture of breadcrumbs and parmesan cheese.
  • Coat Eggplant: Dip each slice in flour, then eggs, and finally the breadcrumb mix.
  • Make sure each slice is well-coated.
  • Frying: Heat oil in a pan over medium.
  • Fry slices until golden, about 3 minutes per side. Rest fried slices on a baking sheet.
  • Layering: Preheat oven to 375°F (190°C).
  • Layer the ingredients in the baking dish: sauce, eggplant, mozzarella, and repeat.
  • Bake: Cover with foil and bake for 25 minutes.
  • Remove foil and bake for another 10 minutes until cheese bubbles and browns lightly.

Notes

Eggplant Prep: Salting eggplant helps reduce any bitterness and extra water.
Don’t skip this step for the best texture.
Cheese Choice: I like using a mix of regular and smoky mozzarella for extra flavor. 🧀
Serving Tip: Let the dish cool for about 5 minutes before serving.
