Ingredients
  

I love how simple this ingredient list is:

  • 2 tablespoons of olive oil
  • 1 onion diced
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 3 cloves of garlic minced
  • 1 zucchini chopped
  • 1 can 15 oz of kidney beans, drained
  • 1 can 15 oz of chickpeas
  • 1 can 28 oz of diced tomatoes
  • 4 cups of vegetable broth
  • 1 cup of small pasta like ditalini
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste
  • Fresh parmesan for serving
  • A handful of spinach or kale

Instructions
 

Let’s turn these ingredients into something amazing:

  • Heat olive oil in the pot over medium heat.
  • Add onion, carrots, and celery. Cook until soft (about 5 minutes).
  • Stir in garlic and zucchini. Cook for another 2 minutes.
  • Add the kidney beans, chickpeas, tomatoes, broth, and seasoning.
  • Bring to a boil, then reduce to simmer for about 20 minutes.
  • Add the pasta and cook until it’s tender.
  • Season with salt and pepper to taste.
  • Throw in the spinach until wilted.

Serve hot with grated parmesan on top.

    Notes

    A few things I like to keep in mind with this soup:
    Fresh herbs like basil can add extra flavor.
    If you want more heat, add a pinch of red pepper flakes.
    Store leftovers in the fridge for up to 3 days. They taste even better the next day!
    Freeze if you make a big batch. It’s convenient for a quick meal.
    You can use any beans you have. They all work well!
