Equipment

  • To make this soup, I gather a few essential tools to keep the process smooth:
  • Large pot: For cooking the soup.
  • Mixing bowls for the meatballs
  • Knife and cutting board for chopping vegetables
  • Measuring spoons and cups to keep things precise
  • Wooden spoon: For stirring.
  • Having these tools ready makes the cooking experience much more enjoyable! 😊

Ingredients

This soup is full of fresh flavors and requires just a handful of simple ingredients:

  • 1 pound ground beef or turkey
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • Fresh parsley chopped
  • Salt and black pepper
  • 1 tablespoon olive oil
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 small onion chopped
  • 8 cups chicken broth
  • 1 cup small pasta like acini di pepe
  • 2 cups spinach or kale

This blend of ingredients comes together to create a delicious soup that’s hard to resist! 🍲

Instructions

Making this soup is a breeze with these simple steps:

  • Form the Meatballs: Mix ground meat, bread crumbs, Parmesan, egg, parsley, salt, and pepper in a bowl. Roll into small balls.
  • Cook the Meatballs: Heat olive oil in a pot. Brown the meatballs; then remove them.
  • Sauté Vegetables: In the same pot, add carrots, celery, and onion. Cook until soft.
  • Combine and Simmer: Pour in the broth. Bring to a boil, then reduce heat. Add meatballs and pasta. Simmer until pasta is cooked.
  • Finish with Greens: Stir in spinach until wilted. Season with salt and pepper to taste.

And that’s it! Your Italian Wedding Soup is ready to enjoy. 🍽️

    Notes

Here are a few tips that can help you make this dish even better:
For a spicier soup, I like to add a pinch of red pepper flakes.
This soup freezes really well. I often double the recipe and save half for later.
For a richer flavor, consider using a mixture of beef and pork for the meatballs.
If you prefer a thicker soup, reduce the broth or increase the pasta amount.
These small tweaks can make an already amazing soup even more tailored to your taste! 😋
