Equipment

  • To make this soup right, I gather my trusty cooking tools. Good equipment makes a difference!
  • Large pot: Ideal for simmering everything together.
  • Cooking spoon: For stirring and mixing the ingredients.
  • Measuring cups and spoons: To get all those spices just right.
  • Cutting board and knife: For chopping veggies.
  • Blender (optional): For a smoother texture, if desired.

Ingredients

The ingredients are the stars of this dish. I love how these simple items create such amazing flavors! Here's what I use:

  • 1 cup lentils: Rinsed and drained
  • 1 cup cooked chickpeas
  • 1 onion chopped
  • 3 tomatoes pureed
  • 2 tablespoons olive oil
  • 2-3 garlic cloves minced
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 1 ½ teaspoons cumin
  • Salt and pepper to taste
  • 4 cups vegetable or chicken broth
  • ½ cup cilantro chopped
  • Lemon wedges for serving

Instructions

Making this soup is a labor of love, and so worth it! The steps are simple:

  • Heat olive oil in the pot over medium heat. Add onions and garlic, cooking until soft.
  • Stir in tomatoes, spices, and herbs. Cook for about 5 minutes.
  • Add lentils and broth. Bring to a boil, then reduce heat to simmer.
  • Simmer for 30 minutes, until lentils are tender.
  • Add chickpeas and cilantro. Cook for another 10 minutes.

Blend if desired for a smoother texture. Serve hot with lemon wedges. 🍋

    Notes

A few tips to make this soup even better! I enjoy experimenting, and these little tricks help:
You can use canned tomatoes if fresh ones aren't available.
For a richer flavor, let the soup sit for a day before serving.
Feel free to add more spice if you like it hotter.
Freeze leftovers in containers for an easy meal later.
Adjust the texture by blending part of the soup or all of it, depending on your preference.
Enjoy making and eating this wonderful soup! 🥣
