Instructions
 

Creating this salad is simple and quick.

    Here’s how I do it:

    • Preheat your oven to 400°F (200°C).
    • Toss pumpkin cubes in olive oil, salt, and pepper. Spread on a baking sheet.
    • Roast for 25 minutes until tender.
    • While roasting, massage kale with a little olive oil in a bowl.
    • In a separate bowl, whisk honey and lemon juice to make the dressing.
    • Combine kale, pumpkin, apple, nuts, and feta in a large bowl.
    • Drizzle dressing over the salad and toss gently.

      I love customizing this salad to my taste.
