Instructions
 

  • Preheat the Oven: First, I set the oven to 350°F (175°C).
  • Mix Dry Ingredients: In a bowl, I whisk the flour, pumpkin pie spice, baking powder, and salt.
  • Cream Butter and Sugar: I beat butter and sugar until it's fluffy. Then, I add the egg and vanilla.
  • Add Pumpkin: Next, I mix in the pumpkin puree until smooth.
  • Combine: Slowly, I add the dry ingredients to the wet, mixing until it's a dough.
  • Chill the Dough: I chill the dough for about 30 minutes.
  • Roll and Cut: I roll the dough on a floured surface and use cookie cutters for shapes.
  • Bake: I lay cookies on a sheet and bake for 10-12 minutes.

Cool: Finally, I let them cool on a rack.

    Notes

    Spice Levels: Adjust the spice if you like it milder or spicier. A little more or less won't hurt! 😉
