  • 4 large bell peppers: Any color works!
  • 1 pound ground beef: You can substitute it with turkey for a leaner option.
  • 1 cup cooked rice: White or brown your choice.
  • 1 medium onion chopped: Adds flavor and texture.
  • 2 cloves garlic minced: For an aromatic touch.
  • 1 can 15 oz diced tomatoes: Keep the juices.
  • 1 cup shredded cheese: Cheddar or mozzarella.
  • Salt and pepper: Season to taste.
  • Olive oil: A drizzle for cooking.

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds.
  • In a large skillet, heat a drizzle of olive oil.
  • Cook the onion and garlic until soft.
  • Add the ground beef and cook until browned.
  • Stir in the rice and diced tomatoes with juice. Season with salt and pepper.
  • Stuff the bell peppers generously with the mixture.
  • Place in a baking dish, and sprinkle with cheese.
  • Cover with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake for another 10 minutes, or until the cheese is bubbly.
