  • Brown sugar: 1/2 cup for sweetness.

  • Eggs: 2 lightly beaten to bind the mixture.
  • Vanilla extract: 1 teaspoon enhances the flavor.

Instructions
 

  • Prepare the crust: Mix graham cracker crumbs and melted butter. Press into mini muffin cups.
  • Bake crust: Preheat oven to 350°F (175°C) and bake the crusts for 5 minutes.
  • Mix the filling: Combine mashed sweet potatoes, brown sugar, cinnamon, nutmeg, eggs, and vanilla. Blend until smooth.
  • Fill the cups: Spoon the sweet potato mix into the crusts, filling just to the top.
  • Bake bites: Return to oven and bake for 15-20 minutes until set.

Notes

One tip I found super helpful is letting these bites cool completely on a cooling rack.

If you're out of brown sugar, white sugar can work too, though it may change the flavor slightly.
