Let's start cooking this yummy soup:

  • Heat olive oil in a large pot over medium heat.
  • Cook onion until it's soft, about 5 minutes.

  • Add zucchini slices and stir. Cook for about 5 minutes.
  • Pour in the vegetable broth.
  • Bring to a boil, then reduce to simmer for 20 minutes.
  • Stir in basil and remove from heat.
  • Blend the soup until smooth using a blender or immersion blender.
  • Season with salt and pepper to taste.

Serve hot and enjoy!
