Here's what you'll need:

  • 2 tbsp Olive Oil
  • 1 Onion chopped
  • 2 Garlic Cloves minced
  • 4 cups Fresh Peas or frozen
  • 3 cups Vegetable Broth
  • 1/4 cup Fresh Mint Leaves
  • Salt and Pepper to taste
  • 1/2 cup Heavy Cream optional, for extra creaminess

Each ingredient brings something special to the taste. I love how the mint pairs with the peas! 🌿

  • Heat olive oil in a large pot over medium heat.
  • Add onions and garlic; sauté until soft.
  • Stir in peas and broth. Bring to a boil, then simmer for 10 minutes.
  • Add mint leaves. Cook for another minute.
  • Remove from heat and blend the soup until smooth.
  • Season with salt and pepper. Stir in cream if you like.

    Notes

    Fresh is best: I’ve found that fresh peas give the soup a vibrant taste, but frozen peas work well too!
    Mint substitutes: If you don't have fresh mint, try using basil or parsley for a different twist.
    Make it vegan: Skip the cream or use coconut milk for a dairy-free version.
